Decadent Brownies

I love to cook and bake for our guests at Pinehurst Inn Bed & Breakfast. Each afternoon I leave an afternoon treat out for guests. The treats might be one of my favorite cookies, mini pies, dessert bars or brownies. I post the recipes for some of these treats (as well as some of our breakfasts) on the Pinehurst Inn B&B website. Over the years, guests have requested the recipe for these brownies (which is a guest favorite), but I had kept it a secret, probably because it took so long to perfect what I think (at least currently) is one of the best brownies around. I decided it is time to share this recipe so you can enjoy these decadent brownies at home any time you want.

Ingredients:

  • 1/2 cup flour
  • 1/2 cup unsweetened cocoa powder (I use Rodelle Dutch processed)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted and slightly cooled
  • 1 TBLSP oil (I typically use vegetable or canola oil)
  • 2 large eggs
  • 1/2 TBSLP pure vanilla extract
  • 1/4 tsp salt
  • 1/2 cup or more of chocolate chips, divided (I like to use Giardelli bittersweet chocolate, but semi sweet works great)
  • Powdered sugar, optional

Instructions:

  1. Pre heat oven to 350 degrees.

    Line an 8 x 8 pan with parchment paper or grease or spray the pan (clean up is easier with parchment paper and the brownies can be easily removed from the pan for slicing), then set aside.

  2. In a small bowl, whisk together flour and cocoa powder. In a larger bowl, whisk together white and brown sugar, melted butter, oil, and salt. Add eggs and whisk until well combined. Add flour and cocoa powder and gently mix with a large spatula until just combined. Do not over mix as it will change the texture of the brownies. Gently stir in 1/4 cup of chocolate chips.

  3. Pour batter into prepared pan and sprinkle remaining chocolate chips over the top of brownies (do not stir). Place pan on middle rack and bake for 23 to 25 minutes. It should appear slightly underdone in the middle. Brownies will continue to bake after they are out of the oven. Let brownies cool at least 20 minutes before slicing. We usually sprinkle the top with powdered sugar, it looks pretty and it adds a nice sweetness to the bittersweet chocolate.

    These go great with a cold glass of milk or steaming hot cup of coffee. Enjoy!

Together we shared one brownie while visiting the Inn and then, excercising restraint, we brought one home to family. The lucky recipient of your Decadent Brownie was Ella, our granddaughter who also loves to bake, she is now 20 years old. Ella Ruoho said: “The best I’ve ever had.”
